Instructions
- In a large mixing bowl, cream the softened butter and monk fruit sweetener until light and airy. This step helps create the tender texture of the cookie.
- Add the egg and vanilla and mix until fully combined.
- In a separate bowl, whisk the einkorn flour and sea salt. Slowly add the dry mixture to the wet mixture and mix gently until a soft dough forms. Einkorn absorbs liquid differently than modern wheat, so avoid overmixing to keep the texture delicate. If the dough feels too sticky, add a tablespoon or two of extra einkorn flour.
